I got this recipe out of a Campbell’s cookbook. It’s a great weeknight meal. Here is my adaptation.
1 box of stovetop stuffing
2 boneless skinless chicken breasts, cubed
2 cups mixed frozen veggies (carrots, broccoli, etc.)
1 can cream of chicken soup
1/2 cup milk
1 1/2 cups shredded cheddar cheese
Prepare stuffing as per package. Combine the chicken and veggies in the bottom of an 8×8″ casserole dish. Add soup, milk, and cheese. Stir. Top with prepared stuffing and cook for 30 minutes or until chicken is done at 400 degrees farenheit. I covered mine for most of it, but found the stuffing was soggy, so I recommend not covering it.
