I caved yesterday and on impulse, bought a Kindle! I haven’t really used it yet, I’m scared to let it leave the house without a case. Once I get my case in the mail I’ll use it more :) I’ll hopefully finally finish the 4th Thrones book!
I BBQ’ed some veggies today for lunch, they turned out really well actually! I used acorn squash, baby carrots, baby potatoes, red pepper and onions, tossed ’em in olive oil and then grilled them. Next time I will put the onions on near the end, they got pretty black.
I also made feta & sundried tomato stuff chicken with a panko crust today, but I forgot to take a picture. The chicken was really juicy, but I’m not a fan of sundried tomatoes – they kind of taste like stinky feet – so I didn’t enjoy it as much as I would have liked.
New teas from Teavana! These 2 mixed together over ice is soooo delicious!! (Blueberry Bliss & Pineapple Kona Pop) I added a bit of rock sugar to make it less sour. My new favourite iced tea :)

How was your week?
The past week and a bit have sucked. Yesterday I was feeling especially stressed so I decided to bake some chocolate chip cookies. I go to open the fridge, guess what I don’t have? Eggs. One of the main ingredients! I wanted the cookies so bad that I decided to Google eggless cookie recipes. Surprisingly, there were quite a few. I used this one from allrecipes.com and halved it. I still got 24 delicious cookies out of it though! They were so soft and chewy and delicious!
A few weeks ago, my friend and I went out for Pho and got these delicious rice paper wraps that had shrimp, noodles, and lettuce in them. I’ve been searching for rice paper forever and finally found it this weekend, I decided to attempt to make some wraps, and I would say they turned out pretty well. My dipping sauce, not so much (rice wine vinegar and siracha, not a good mix!)
Cooked, peeled shrimp
Cooked vermicelli noodles
Wet the rice paper, give it a second to rest (this is an awesome tutorial)
Add everything but shrimp.
Follow above link’s directions on how to roll.
Create a good tasting dipping sauce, and there you have it!
This week, for some reason, I’m very nail inspired, and I thoroughly enjoy my dotting tools. So I ended up doing new Valentine’s Day nails again, here they are:
Another new obsession is grilled cheese with hot banana peppers in it. Delish!! Wanna know the secret to the perfect grilled cheese? You have to cook it on low-medium heat and slowly toast it and let the cheese melt and get all gooey. I find too many people cook their grilled cheeses on higher heat and then the bread doesn’t get as toasty.
Have you tried this before? Delicious!!
I’ve been trying to eat less processed food lately (we’ll just pretend I didn’t go to Red Lobster today haha), so I’ve been trying to find more healthy snacks (see here.) I was craving a smoothie today so I googled a couple different recipes. I ended up just coming up with my own. It was so tasty!!
For 2 8oz. smoothies:
1/2 cup chopped pineapple
1/2 cup vanilla greek yogurt
1/4 cup milk
2 tbsp whole flaxseeds
You can add more yogurt or ice to thicken it, or water if you find it too thick for your taste.
What do you put in your smoothies?
Sorry I’ve been so MIA lately, back to school kicked my butt! So…. I leave for Dominican Republic in just over 3 weeks (wooo first all inclusive trip!), and I want to be beach body ready/I want to change what I eat. I am a hugeeeeeeeeee junkie. I have a giant sweet tooth,I honestly can’t resist anything. Luckily my metabolism is high so I don’t pack on the pounds, but I know that you can be skinny fat, where you look skinny but are unhealthy on the inside. Hence my decision to change my eating style. I want to focus on drinking more water, avoiding juices (sugary ones), eat more veggies, less chips, and more non-processed foods.
Last week I discovered this fairly healthy treat: Kale Chips! I’ve seen kale on the Food Network numerous times, but had never seen it or tasted it in real life. When my boss mentioned how they melted in your mouth, I couldn’t resist trying them! They’re super easy to make (about 5 mins) and are high in fiber, iron, calcium, vitamins A & C. Talk about power food! What I do is drizzle a little olive oil on leaves ripped into bite size pieces (as little oil as possible) and then sprinkle a little bit of salt and a little bit of garlic powder, just enough to give them some extra flavour. Next throw em in the oven at 350C for about 5 mins or so, take them out and check if they’re crispy. Once they’re crispy (but not burnt!) Pull em out and enjoy!
I want to eat a lot more healthy snacks, and maybe get into smoothies a little bit for breakfast or something. What kind of healthy snacks do you enjoy?
I love shrimp. I love tacos. I love fish tacos especially. Tonight I had a huge craving for fish tacos, but didn’t have any fish to make them with. Then I remembered the shrimp tacos I’d had at Boston Pizza a few months ago, and decided I would attempt it. I found a good recipe here, but changed up the style of shrimp. I did keep the slaw though and man are they ever tasty! It’s just the right amount of cool and spice mixed together!
Here’s how I did my shrimp:
Thawed raw tiger shrimp, shelled them, dipped them in raw egg and then into a mixture of flour, panko and cajun seasoning. I then fried them up. Easy as that!
The slaw recipe is super simple as well, just some cabbage, jalapeno, and a mayo/sugar/cayenne sauce.
Oh how I love these.
I don’t have a picture of the assembled taco because I’m going to eat them for lunch tomorrow at placement, I just had to taste test tonight of course!
